So you’ve finished lunch/dinner, picked up your phone, began digging around for a quick simple dessert,and have ended up stumbling here..
I’ve been there, and I favored the recipes which have a large scoop of chocolate hazelnut spread in the center, or chocolate in the bottom of the mug. But I found that I always had to add a ton of chocolate in order to enjoy the cake because the cake itself wasn’t very tasty, so I started to experiment and ended up with this recipe.
Grab a large mug and let’s get right to it then…after all, your craving won’t satisfy itself..
- 1/3 cup plain flour
- 1/4 teaspoon baking powder
- 2 teaspoons unsweetened cocoa
- 2 tablespoons sugar (caster or brown, whichever you prefer)
- 2 tablespoons vegetable oil
- 1/3 cup milk
- 1/2 teaspoon peanut butter
- 1 tablespoon chocolate hazelnut spread
- A couple of drops vanilla extract
- Pinch of salt
- Handful of walnuts (optional)
- 1/3 teaspoon coffee (optional)
In a microwave safe mug, pour in the sugar, cocoa, sugar, flour, baking powder, salt, coffee, and mix well.
Add in the oil, milk, peanut butter, vanilla and whisk well (if it’s too dry add in a little more milk).
Roughly chop the walnuts, fold them in the batter (mix it slowly) and add in a scoop of chocolate spread in the batter, making sure to let it sink in and be covered in batter. Do not mix it in.
Pop it in the microwave for 60 seconds on high and let it cool before eating.
You can literally add anything you want into these cakes, top them with whatever you like, and tailor it to your preference.
