Banana Cake

Although I’m not much of a fruit-lover, and I try to avoid them as much as possible (especially bananas and apples..), this cake is an exception.

When my mother decided she wanted to try to make a banana cake rather than her signature chocolate cake, I was extremely reluctant. But I was singing a different tune when I tried a slice with some vanilla ice-cream.

Let’s get right into it:


  • 4 Ripe Bananas, mashed
  • 2 1/2 Cups of Flour
  • 2 tsp Baking Powder
  • 1/2 Cup of Milk
  • 250g of Butter
  • 4 Eggs
  • 2 tsp Vanilla Extract
  • 1 1/2 Cups of Sugar
  • 2 tsp Baking Soda


Pre-heat oven to 177 degrees Celsius, line a cake tin with baking paper of spray.

Beat the butter and sugar together, add in the eggs one at a time

Add vanilla and mashed bananas. Mix thoroughly


Doesn’t create the prettiest nor the most appetizing of concoctions but just you wait.

Mix in the baking soda and milk, then gently fold in the flour and baking powder, careful not to over-mix it

I added in walnuts and almonds because I’m slightly obsessed, but it’s optional.

Bake for 45-55 minutes, or until you insert a wooden skewer and it comes out clean



You could either top it with Lemon icing, or dust icing sugar on the top
